I am officially a fan of Super Bowl Sunday. This year was by far the best yet. Even though I did not see a single second of football or the commercials or the crumby halftime show that went with it all. Okay, I did YouTube a couple of the commercials and the halftime show, just to see what the big deal was all about.
But aside from the actual football, my favorite part was the company we took in and the food. Oh! The Food!!
We invited a neighbor family and another couple over. We sent the husbands and sons off to the basement with plates and plates of food where they watched football on our Christmas Projector. This is my new most favorite thing in the world, the projector. At least til I get to the fruit dip in a minute.
While the men were footballing (yes, that's a real word because it didn't come up on spell-check), we ladies spent the evening shooting the breeze and watching one of my favorite movies, Bride Wars. Baby played and giggled and cooed, gumming her carrots. Some of the best company you'll ever keep. I'd tell you who they were, but then I'd have to beat you down so you didn't steal them away from us.
Okay, the second best part. The Food. I didn't take pictures because there just wasn't time before it all disappeared. Jake and I provided the fruit and veggies and the most awesome Nachoesque creation. We also had potato skins supplied, beyond delicious with the bacon and the butter and the dipping sauce, I think I'm drooling. And our neighbors brought homemade bread sticks and red sauce dip to dip them. After everything was cleaned up, I still couldn't stop eating those stupid bread sticks. I even got a clean plate out so I could put some more sauce on it and not double dip. The best thing is that it was all not too bad healthy wise for us. Mostly. Oh, and brownies, too.
So I have to tell you about Jake's Nachoesque creation and the fruit dip. Both were new recipes for us, but they turned out so good. The guys kept coming up for spoonful after spoonful of the Nacho stuff. And the the fruit dip was put on everything, including the brownies!
Here's Jake's recipe. He altered the original to meet our picky palettes.
1 lb. Browned Ground Turkey
1 Packet Taco Seasoning
1/2 C Water
1/2 C Tomato Sauce
3/4 C Pureed Salsa (we like the taste, just not the chunky chunks)
1 Can of Black Beans
1 Can of Refried Beans
Shredded Cheddar Cheese
Combine the first six ingredients and cook till the liquid is gone. Stir in the refried beans. Put in a serving bowl, top with lots of shredded cheddar, serve with tortilla chips. That's it! So good! I'm tellin' ya, people loved it!
And now on to the fruit dip. I'm sure most of you already make this, but I had never had it till I went to Relief Society several weeks ago. I asked the sista for her recipe and here it is:
1 Cream Cheese
1 Small Jar of Marshmallow.
Mix until combined, refrigerate until you serve it.
I made such a mess making this, probably because I needed a little bit bigger bowl. And the marshmallow was pretty sticky. But once you get past that, it's SO easy. I've even been sneaking spoonfuls of the leftovers today. It's that good. It doesn't taste like cream cheese, but it doesn't taste like marshmallow either. Yummmm!!! Talking about it makes me want it even more!
I think this Super Bowl thing will become my new favorite, yearly tradition. And next year, you're all invited!
